Recipe  proposed by Lomagne Tourist Office

Ingredients (6 pers)

-2L of water
-1 tablespoon of geese or duck grease
-1 handful of garlic cloves
-2 eggs
-salt, pepper


-Boil the water.
-Melt the grease in pan and lightly fry the cloves.
-Add all of it to the water. Salt, pepper et let it boil for at least 15 more minutes.
-Just before serving,break the eggs and add the whites to the broth.
-Whip the yolks with a bit of vinegar. add to the soup.
-Add croutons or slices of stale bread.
-Leave under a lid.
