Recipe proposed by Bissagnet pastry shop in Beaumont de Lomagne
-5 egg whitess (ie 150 to 160 g)
-100 g melted 1/2 salted butter
-80g of hazelnut powder
-150 g of sugar
-75 g of flour
-1 full tea spoon of baking powder
Whip the egg withes until stiff peaks form.
add the sugar and the hazelnut powder by pouring delicatly.
add the siftedflour, baking powder and melted powder
Pour the pastry in a cake mould.
Bake the cake for 15 min at 200° C, then 10 more minutes at 150 ° C
Take the cake out of the oven, let it cool down fopr a bit and unmold.
Advice : Enjoy with vanilla or chocolate custard sauce or with a white chocolate frosting.
